Method
To make the pasta sauce, blend in a blender the coriander, parsley, basil, olive oil, orange zest and garlic until it's a smooth sauce.
Fold this into the hot cooked pasta in a bowl and season.
For the veal, wrap the cheese around the flattened veal and secure it with a cocktail stick.
Sear in a hot pan with the oil and cover and cook for four minutes or until cooked through.
Serve the pasta with the veal.
Herby pasta with stuffed veal

Ingredients
For the pasta:
3 tbsp coriander
3 tbsp parsley
3 tbsp basil
5 tbsp olive oil
1 orange, zest only
1 garlic clove
200g/7oz freshly cooked pasta
salt and freshly ground black pepper
For the stuffed veal:
25g/1oz mozzarella
100g/3½oz veal escalope, flattened
2 tbsp olive oil
